For instance, if there was a horse that opened at 4:1 and I were to place a Win bet of 0k on him, how much of a change would I expect to see? Meaning what odd would he “go off” at?

Nothing.

The odds in horse racing are determined by the horse’s prior performances, the horse’s current condition, and how the horse compares to other horse’s in the same race.

The amounts of money bet on a horse after the odds have been established has nothing to do with it.
