For example PaddyPower can have 50 or so events, will several things to bet on, and they update their odds constantly! Do they have a lot of people doing it? Or is their a formula?

Betting websites all have their own team of line makers that monitor the action they take, line moves by other companies and events that might impact the betting action, like injuries.
Software will help by alerting them whenever
– there is heavy betting action leaning one side of a match-up
– other market leaders change their odds
– news of a key injury breaks or anything else that will likely cause people to bet one side
Bigger companies have bigger teams of course, smaller companies sometimes only have one guy, who will mainly watch what the bigger ones do.
